Here are a few recipes for healthy, gratifying winter vegetable stews utilizing local vegetables.<\/p>\n<p><strong>1. Squash and Carrot Stew<\/strong><\/p>\n<p>Serve this beautiful orange stew over rice or millet.<\/p>\n<p>Ingredients:<\/p>\n<p>* 3 cups of cubed, peeled butternut squash (you\u2019ll need a squash that is about one and a half pounds for this yield)<br \/>\n* 2 cups chunked, peeled carrots<br \/>\n* 1 can diced tomatoes (14.5-ounce), drained<br \/>\n* 1 cup water<br \/>\n* 1 cup chopped onion<br \/>\n* 3 garlic\u00a0<a href=\"\/recommends\/StarWestBotanicals\" target=\"_blank\" rel=\"nofollow noopener\">cloves<\/a>, chopped<br \/>\n* 2 tablespoons olive oil<br \/>\n* 2 teaspoons paprika (Hungarian sweet paprika will afford the stew a deep, smoky taste, but regular paprika will work)<br \/>\n* 1 teaspoon kosher salt<br \/>\n* 1\/2 teaspoon each of ground\u00a0<a href=\"\/recommends\/StarWestBotanicals\" target=\"_blank\" rel=\"nofollow noopener\">black pepper<\/a>,\u00a0<a href=\"\/recommends\/StarWestBotanicals\" target=\"_blank\" rel=\"nofollow noopener\">coriander<\/a>,\u00a0<a href=\"\/recommends\/StarWestBotanicals\" target=\"_blank\" rel=\"nofollow noopener\">cumin<\/a>,\u00a0<a href=\"\/recommends\/StarWestBotanicals\" target=\"_blank\" rel=\"nofollow noopener\">turmeric<\/a>, and\u00a0<a href=\"\/recommends\/StarWestBotanicals\" target=\"_blank\" rel=\"nofollow noopener\">ginger<\/a><br \/>\n* 1\/2 teaspoon\u00a0<a href=\"\/recommends\/StarWestBotanicals\" target=\"_blank\" rel=\"nofollow noopener\">cayenne<\/a>\u00a0pepper (optional)<br \/>\n* 2 tablespoons fresh lemon juice<\/p>\n<p>Directions<\/p>\n<p>Saut\u00e9 the onions in the\u00a0<a href=\"\/recommends\/OrganicOliveOil\" target=\"_blank\" rel=\"nofollow noopener\">olive oil<\/a>\u00a0until they\u2019re soft. Then add the garlic and all the spices. Stir to combine. Pour in the water, tomatoes, and lemon juice. After it comes to a boil, add the squash and the carrots. Simmer the stew over medium-low heat for around twenty-five minutes. Then stir in the salt and pepper and correct to taste.<br \/>\n<strong><br \/>\n2. Crockpot Root Vegetable Stew<\/strong><\/p>\n<p>A crusty, whole wheat artisan bread would go well with this stew.<\/p>\n<p>Ingredients:<\/p>\n<p>* 2 tablespoons\u00a0<a href=\"\/recommends\/MountainRoseHerbs\" target=\"_blank\" rel=\"nofollow noopener\">olive oil<\/a><br \/>\n* 4 to 6 small shallots, peeled and cut in half<br \/>\n* 8 chunked, peeled carrots or baby carrots<br \/>\n* 1 pound new potatoes<br \/>\n* 2 turnips or 1 small rutabaga, or a combination<br \/>\n* 2\u00a0<a href=\"\/recommends\/StarWestBotanicals\" target=\"_blank\" rel=\"nofollow noopener\">cloves<\/a>\u00a0crushed or minced garlic<br \/>\n* 1\u00bd cups vegetable stock<br \/>\n* \u00bc cup dry red or white wine<br \/>\n* 1 tablespoon tamari soy sauce<br \/>\n* 1\u00bd teaspoons dried \u201cpoultry seasoning\u201d or a mix of\u00a0<a href=\"\/recommends\/StarWestBotanicals\" target=\"_blank\" rel=\"nofollow noopener\">thyme<\/a>,\u00a0<a href=\"\/recommends\/StarWestBotanicals\" target=\"_blank\" rel=\"nofollow noopener\">sage<\/a>, and savory<br \/>\n* Salt and\u00a0<a href=\"\/recommends\/StarWestBotanicals\" target=\"_blank\" rel=\"nofollow noopener\">black pepper<\/a>\u00a0to taste<\/p>\n<p>Directions<\/p>\n<p>Scrub potatoes and cut them if required so that no chunks are larger than one and a half inches. Peel the turnips or rutabagas and cut them into\u00a0 1.5 nch pieces.<\/p>\n<p>Use 1 tablespoon of the\u00a0<a href=\"\/recommends\/OrganicOliveOil\" target=\"_blank\" rel=\"nofollow noopener\">olive oil<\/a>\u00a0to coat the bottom of a crockpot. Put in the shallots, carrots, potatoes, turnips and toss them to coat them in the oil. Contribute the salt and pepper, pour in the liquids, and dust on the herbs. Drizzle the remaining tablespoonful of\u00a0<a href=\"\/recommends\/MountainRoseHerbs\" target=\"_blank\" rel=\"nofollow noopener\">olive oil<\/a>\u00a0over the stew. Cover and cook on low for six to eight hours.<\/p>\n<p>This recipe may be adapted to a pressure cooker or stovetop cooking. For stovetop cooking, heat the oil 1st and add all the ingredients; bring to a boil, lower heat to simmer, and cook for an hour and one-half.
